Banana & Blueberry Muffins

Serves: 12

Ingredients:

Wet:

  • 2x ripe banana’s, mashed

  • 1/2C natural yoghurt

  • 1tsp vanilla essence

  • 1/4C honey

  • 1C milk (I used almond milk)

Dry:

  • 1C plain flour

  • 1/2C almond flour

  • 1/2C coconut flour

  • 1tsp baking powder

  • 1tsp bicarb soda

  • 2tsp cinnamon

Additional

  • 1C frozen blueberries

Method:

  1. Preheat oven to 180 and prepare muffin tin.

  2. Combine all wet ingredients and stir till combined.

  3. Add in dry ingredients and stir to combine well.

  4. Stir through the blueberries and evenly distribute between the muffin holes.

  5. Bake in oven for ~40 minutes.

Notes:

  • Use gluten free plain flour for a gluten free option.

  • Swap blueberries for a different fruit or choc chips for a different flavour.
