Ginger Banana Bread

Ingredients:

Wet Ingredients:

  • 3 ripe bananas, mashed

  • 1 tsp vanilla essence

  • 1 egg

  • 1/3 C brown sugar

  • 1/4 C almond milk

Dry Ingredients:

  • 1 1/2 C plain flour

  • 1 C almond meal

  • 1 tsp baking powder

  • 1/2 tsp bicarb soda

  • Pinch salt

  • 2 tsp cinnamon

  • 2 tsp ginger

  • 1/2 tsp nutmeg

  • 1/4 tsp cloves

Methods:

  1. Preheat oven to 180°C and prepare a loaf tin.

  2. Combine all wet ingredients into a bowl.

  3. Add dry ingredients into wet ingredients and fold through to combine.

  4. Pour into loaf tin and bake for ~40 mins.

  5. Allow to cool before cutting.

Notes:

  • Use gluten free flour for a gluten free option.

  • Use 1 flax egg for a vegan option - 1 Tbs of ground flaxseeds mixed in 3 Tbs water
