Salmon One Dish Bake

Ingredients

  • 1 leek, sliced in the middle, washed & finely sliced

  • 4x garlic gloves, peeled & diced

  • 2 tsp paprika, ground

  • 2 tsp pepper

  • 10g fresh oregano, roughly chopped

  • 1 can (400g) cannellini beans, drained & rinsed

  • 1 lemon, juiced

  • 1 punnet (250g) cherry tomatoes, halved

  • 1 cup vegetable stock, salt reduced

Salmon fillets

  • 4x salmon fillets (460g pack), skin off

  • 1 tsp pepper

  • ¼ cup capers

Methods:

  1. Preheat oven to 200°C.

  2. In a large oven proof dish, add ingredients except for the salmon ingredients and stir to combine. Place a wet crumbled piece of baking paper over the top of the dish & roasted for 20 minutes.

  3. While leek mixture is cooking, season your salmon & set aside.

  4. Removed dish from the oven & evenly nestle salmon fillets & sprinkle capers into the leek mixture. Cover with the paper & roast for another 10 minutes or until cooked to your liking.

 Cooking Tips:

  • Serve with your favourite side salad

  • If you dislike salmon, you can use barramundi fillets instead
