Gluten Free Berry & Apple Crumble

Ingredients:

Berry & Apple Filling:

  • 3 granny smith apples, peeled, decored & diced

  • 3 C frozen mixed berries

  • 1 Tbs water

  • 1 Tbs lemon juice

  • 1 tsp vanilla essence

  • 2 tsp cinnamon

  • 1 Tbs brown sugar

Crumble Mix:

  • 3/4 C almond meal

  • 1/2 C (75g) cashews, chopped

  • 1/2 C (75g) mixed sunflower and pepita seeds

  • 1/2 C (15g) soy protein puffs (or rice puffs)

  • 1 Tbs brown sugar

  • 1 tsp cinnamon

  • 1tsp vanilla essence

  • 80g nuttelex

Methods:

  1. Preheat oven to 180°C.

  2. Add all filling ingredients into a saucepan and cook on low heat for roughly 20 minutes stirring occasionally or until fruit has softened.

  3. While filling is cooking, prepare crumble by adding all crumble ingredients (except nuttelex) into a bowl. Rub nuttelex through crumble mix with hands until evenly distributed.

  4. Once filling is cooked, add into an oven proth dish and evenly spread the crumble on top.

  5. Bake in oven for roughly 30mins or until golden brown.

  6. Serve with ice cream or natural yoghurt.
