One Dish Pesto Gnocchi Meatballs

Serves: 4

Cooking time: 1 hour

Ingredients:

  • 1 packet (~500g) gnocchi

  • 1 onion, peeled & diced

  • 3 garlic cloves, peeled & crushed

  • 1 zucchini, diced

  • 1 carrot, diced

  • 120g baby spinach

  • 1 packet (~250g) cherry tomatoes

  • 3/4 cup water

  • 1 lemon, juiced

  • 125g ricotta

  • 1 packet (~400g) of meatballs

  • Seasoning: paprika, pepper, mixed herbs, chilli (optional)

  • 1 pesto jar (~190g)

  • 20g parmesan cheese, grated

Method:

  1. Preheat the oven to 180℃.

  2. Place all ingredients (except pesto and parmesan cheese) into your oven proof dish and mix through.

  3. Cover dish with foil and bake in the oven for 30 minutes.

  4. Remove dish from oven, add pesto jar and mix to combine. Sprinkle parmesan cheese on top, cover and return to oven to bake for another 30 minutes.

  5. Remove from oven, serve and enjoy!

Tips:

  • Opt for turkey meatball for a leaner option

  • Swap ricotta for cottage cheese for a higher protein option
