Mediterranean Quinoa & Chickpea Salad

Ingredients:

  • 1 C dry quinoa, prepare according to packet instructions (with vegetable stock)

  • 1 cucumber, diced

  • 2 tomatoes, diced

  • 15 olives, halved

  • 1 can chickpeas, drained & rinsed

  • 2 handfuls rocket

  • 1/2 block feta

Dressing:

  • 2 garlic cloves, peeled & diced

  • 1 tsp Dijon mustard

  • 1 Tbs olive oil

  • 1 lemon, juiced

  • Salt and pepper to taste

Method:

  1. Combine quinoa, cucumber, tomato, olives, chickpeas in a large bowl.

  2. Mix dressing ingredients together and pour over salad.

  3. Serve salad on rocket and sprinkle feta ontop.
