Mediterranean Quinoa & Chickpea Salad
Ingredients:
1 C dry quinoa, prepare according to packet instructions (with vegetable stock)
1 cucumber, diced
2 tomatoes, diced
15 olives, halved
1 can chickpeas, drained & rinsed
2 handfuls rocket
1/2 block feta
Dressing:
2 garlic cloves, peeled & diced
1 tsp Dijon mustard
1 Tbs olive oil
1 lemon, juiced
Salt and pepper to taste
Method:
Combine quinoa, cucumber, tomato, olives, chickpeas in a large bowl.
Mix dressing ingredients together and pour over salad.
Serve salad on rocket and sprinkle feta ontop.
