Mini Baked Blueberry Cheesecakes

Serves: 6

Ingredients:

Base 

  • 1 C (100g) oats, blended 

  •  2 ½ Tbs (50g) nuttelex, melted 

  • 2 tsp honey

Filling

  • ¼ C (65g) natural yoghurt

  • ¼ C (65g) cottage cheese

  • 1 egg

  • 1 tsp vanilla essence

  • 1 tsp honey

  • 1 tsp fresh lemon, juiced

  • 1 tsp fresh lemon, zest

  • 1 tsp corn flour 

  • 50g blueberries

Method:

  1. Preheat oven to 180℃ and prepare a silicone muffin tin.

  2. In a bowl, combine base ingredients and evenly distribute between muffin holes.

  3. Whisk together the filling ingredients (except blueberries) and pour onto base. 

  4. Add blueberries on top and bake for 25 mins.

Tips: Try different fruit flavours. E.g. passionfruit, peaches, strawberries, etc.
